Light Italian Meatball Soup

INGREDIENTS:

2 cups frozen mixed vegetables

4 cups low sodium beef broth

2 cups water

4 Tbsp tomato paste

1 (14.5-oz) can fire roasted diced tomatoes with garlic

½ lb Ditalini pasta

1Tbsp Italian seasoning

2 tsps. chopped garlic

18 frozen Italian Meatballs

DIRECTIONS In a large 8 quart stock pot over medium high add broth, water, Italian seasoning, garlic, frozen vegetables, tomato paste and tomatoes. Stir to combine. Cover and bring to a boil. Cover. Allow to boil for 5 minutes. Stir meatballs gently. Add pasta. Cook 10 minutes or until pasta is done. Stir and serve. Top with Parmesan cheese and serve with garlic bread.
