Better Butter

soft butter

2 sticks solid butter (softened)

1 cup light olive oil *

Whip the softened butter until fluffy with an electric mixer. Add the olive oil a little at a time until it is all incorporated. The finished product with by a thick liquid, but will harden after refrigeration.

*light olive oil is lighter in color so that the finished product still looks like whipped butter. You can use regular olive oil but it will have a slight greenish tint.

Nutritional Information:

This has the same amount of calories as butter or olive oil, but half the saturated fat and in the case of salted butter half the salt. You can use unsalted butter to further reduce the salt.
