Lower Fat chocolate chip cookies

½ cup sugar minus 1 T.

¼ light brown sugar

¼ cup room temperature butter or margarine

1 t. vanilla extract

1 egg white or ¼ cup egg beaters

1 cup + 2 T. all-purpose flour

½ t. baking soda

¼ t. salt

¼ cup miniature semisweet chocolate chips.

Preheat the oven to 375 degrees. Sift together, flour, salt and baking and set aside. Cream together butter, sugar, brown sugar, egg white and vanilla for 2 minutes in a medium sized bowl. Stir in flour mixture just until combined. Stir in chocolate chips. Chill dough for 5 – 10 minutes in the freezer. Drop dough by rounded teaspoonfuls about 2 inches apart on an ungreased baking sheet lined with parchment paper. Bake for 8 – 10 minutes or until edges are lightly brown. Remove for over and allow cookies to cool for 2 – 3 minutes on baking sheet before removing them with a spatula to a cooling rack.

Even though these are lower fat, my family rated them some of the best chocolate chip cookies ever.
